Our Story

In 1954, Azerbaijan’s first fish farm—and one of the world’s earliest experimental aquaculture facilities—was established in the Neftchala district. The location was specifically chosen to align with Azerbaijan’s historic sturgeon spawning grounds, where the fish migrate upstream from the sea. Situated at the mouth of the Kura River on the western shore of the Caspian Sea, the farm was privatized by AFF in 2017. Since then, extensive modernization, equipment upgrades, and improvements have been carried out to ensure ongoing progress and development.

Baku Caviar production methods

For us, adhering to sustainable aquaculture practices is the most environmentally friendly way to produce caviar at a commercially viable level.

Our production process combines traditional and modern aquaculture techniques. By utilising Recirculating Aquaculture Systems (RAS), cage farming models, and state-of-the-art coastal tanks, we provide a “comfortable growing” environment for sturgeon.

In the RAS system, fresh water from the Kura River is circulated from the hatching phase through the fish’s early life stages. The RAS system not only ensures excellent water quality and nutrition but also creates a stress-free environment that allows the fish to thrive.

At the same time, Caspian Sea saltwater is used to purify the fish prior to harvesting, removing any off-flavours and ensuring that the caviar’s taste is indistinguishable from its natural counterpart. During the purification process, the fish are transferred to clean, temperature-controlled water and kept without feeding to remove any impurities.

By combining the circulation of saltwater and freshwater, we are able to replicate the fish’s natural habitat while supplying the global market with ethically produced and environmentally sustainable caviar.

It is worth noting that in Azerbaijan, AFF is uniquely capable of purifying fish in Caspian Sea saltwater prior to harvesting.

Restoration and Preservation of Caspian Sea Biodiversity

We are committed to environmentally friendly caviar production to protect the ecosystem. Our remarkable efforts include hosting juvenile fish release events to save and strengthen populations of endangered sturgeon. In keeping with our brand promise, 10 juvenile sturgeon are released for every jar of caviar sold. This initiative helps replenish the population of sturgeon species native to the Caspian Sea.

1. BAP (Best Aquaculture Practices) certification

Azerbaijan Fish Farm LLC is BAP certified and offers products based on sustainable aquaculture.

  • Features: meets strict standards covering environmental protection, animal welfare, workers’ rights and food safety.

2. ISO 22000 certification

Our production processes comply with the ISO 22000 food safety management standard. This certification guarantees that safety and quality are thoroughly controlled throughout the entire food production process, from production to distribution.

3. KOSHER certification

KOSHER certification certifies that products are in accordance with Jewish dietary discipline. Our KOSHER-certified products are suitable for a wide range of customers.

4. Halal certification

Halal certification is granted to products manufactured in accordance with Islamic doctrine, and Silkraod Inc. has halal certification for some of its products, such as Baku Caviar and Olive Oil, making them safe for Muslim customers.
